Step 1: Prepare the Fruit

Wash, peel and cut the mango and pineapple fruits into small chunks. Make sure to remove any stains or bruises from the fruits.

Step 2: Blend the Fruit

Take the prepared mango and pineapple fruits and put them in a blender or food processor. Process until you get a smooth puree. Optionally, you can add one tablespoon of honey to sweeten the puree.

Cover a baking sheet with parchment paper. Ladle the fruit puree onto the parchment paper and use a spatula to spread it evenly. Try to maintain about 1/8 inch thickness for uniform drying.

Step 4: Dry the Puree

Using an Oven: Set your oven to the lowest heat setting which is usually about 140°F (60°C). Leave the baking sheet in the oven and dry for about 6-8 hours checking periodically to prevent over-drying. You can touch the fruit leather to check if it has dried. When it feels not sticky anymore, it is ready.

Using a Dehydrator: Set the dehydrator to 135°F (57°C). Put the tray in the dehydrator and dry for about 4-6 hours checking periodically to ensure the leather has reached desired consistency.

Step 5: Cool and Cut

After drying, allow the fruit leather to cool down. Peel off from the parchment paper and cut into strips or any shape you like using a knife or scissors.

Storage

The fruit leather is best stored in an airtight container and can last for a week at room temperature or longer if refrigerated.
