Why is Citrus so Hard to Dehydrate?

Dehydrating an orange should be simple right? 

You slice them put them into the dehydrator and go.

Actually, it’s a little more complicated.

The main problem is that the most delicious part of the citrus is the juice while the rind and the seed are usually very sour although there also very nutritious Though dehydrating is a great way to preserve the fruit it leaves it with a more bitter taste. Both parts of the citrus also dry very differently so it’s hard to get it evenly dehydrated.

How to Prepare Your Citrus

Your first task is to clean your citrus using a veggie wash. Scrub the fruit using the wash to make sure that any bacteria is cleaned off. 

Next cut the citrus into as many thin slices as you can. It’s defiantly possible to do this with a knife the best option is to use a slicer. These ensure you get the thinnest slices without much hassle.

Next, separate the citrus from the skin. Though this step is optional it usually leads to better and more even citrus slices.

It’s also a good idea to use organic fruits if you plan on dehydrating the entire fruit whole. Since organic fruit tends to come thicker and stay fresher longer. 

Why Low Heat Works Best 

After you’ve prepared the fruit place it in the dehydrator making sure that none of the slices are touching one another.

Food dehydrator reviews rarely tend to mention the temperature that’s best to start on lower temperatures.

You want to set your Ambiano digital food dehydrator at around 135F to begin. 

How Long Does It Take?

The best food dehydrators allow for a wide range of temperatures so you can experiment and see which one works best.

This is also dependent on the qualities you want in your citrus. If you want it dry so you can ground it into a powder then it should take at least 24 hours. A good rule of thumb is to leave it in for 12 hours.
